My grandmother is diabetic (and on dialysis) and on a sodium restricted diet. I would like to be able to take her out to eat. I tried google low sodium restaurants in Portland but it didn't turn up much.
If anyone has ANY ideas I would really appreciate it! Thanks!

In general, it's pretty difficult to eat out and not get a lot of sodium because of all the prepacked products they use. I would suggest going somewhere where you could get broiled seafood with a salad and some kind of bread. I would say a baked potato, but I know that potatos are limited on a dialysis diet.
Look for food that has not been processed too much - for example, seafood, steak and chicken that aren't breaded and fried, & aren't marinated. Most oriental food is pretty high sodium. Pizza is not too great either. You can probably make something work out at most restaurants.

portland has tons of healthy restaurants... low sodium pretty much means anything that was not preserved or frozen, so pretty much anything besides fast food. salads, sandwiches, grilled meat/chicken/fish. any restaurant serving fresh simple food. avoid chinese.

Sushi's low sodium if you don't put soy sauce on it.
. . . that's all I can think of, sorry. If you went to a big chain like Olive Garden or something they'd probably have low-sodium options.
