Question:
Does anyone have a candied yams recipe where the yams come out with caramel-like edges?

I've tried many recipes - I don't want it to be watery and syrupy - I don't want it to taste like baby food. I cannot get it to taste the way Mother used to make. Unfortunately, she didn't write the recipe down and she's in a happier place.

My recipe is similar to silsa1's. With some small variations.

If you want the crunch, this is what I do:

I don't use caramel topping and I use the large marshmallows. Sometimes the coconut covered ones.



Add 1 Tablespoon lemmon juice

1 small can of pinapple chunks (drained)

1 cup of sliced pecans And a cup of coconut.

Top GENEROUSLY with dark brown sugar& don't top with marshmallows just yet.



Bake for 30 min. at 325 degrees.

Take them out of the oven and set your range to BROIL.

Once again cover the top with more brown sugar cover the top with large marshmallows



Make sure you cut the marshmallows in half, then with a knife or scissors, snip the marshmallows evenly in 4 places, almost to the center. This way they will lay flat.



It's important that you use the large marshmallows instead of the small for this last step.



This is how you get the crunch.

When the broiler light goes off, place them on the top rack , closest to the broiler.

WATCH THEM LIKE A HAWK!...The brown sugar will crystalize fast and you don't want the marshmallows to turn to ash.



Just watch. When the brown sugar starts to bubble and the marshmallows have a nice brown crust, THEY"RE READY! AND CRUNCHY ON TOP!

INGREDIENTS:

4 cups chopped sweet potato

1 (12 ounce) jar caramel topping

1/8 cup brown sugar

1/2 cup butter

1 cup miniature marshmallows





DIRECTIONS:

Preheat oven to 325 degrees F (165 degrees C).

Place sweet potatoes in an 8x8 inch square baking dish. Pour caramel over potatoes. Sprinkle with sugar and dot with butter.

Bake in preheated oven 30 minutes, until potatoes are tender and mixture is bubbly. Remove from oven and sprinkle marshmallows evenly over potatoes. Return to oven until marshmallows are melted and browned, 5 to 10 minutes more.
